I'm getting the filling point moved from under the back bumper to where the petrol fill point is so easier to fill up.
A local lpg fitter said he can do it for me. Is there anything I need to make sure he does safety wise etc. I know it has to have some kind of escape outlet pipe anything else?

You want it sealed in such a way that if it leaks, that its kept away from the inside of the car. Typical way to do that is by enclosing it inside vent pipe and sealing at the ends, if it needs to go through the interior of the cat. That depends on what car and where the tank/valve is, in some cases that will be outside the car.
Wherever it it secured to needs to be able to withstand an accidental drive off whilst it's still connected as well. There is a specific load its supposed to withstand, which will separate the filler hose from the pump.
