Just a thought but as the problem seems to differ when the switches are changed have you checked the switch wire where is goes through the bulkhead? If the cats have been removed I would expect rear probe faults, but shouldn't make it run lean I don't think. If you have a good look at the freeze frame data once the eml comes on again it should tell you the long & short fuel trims for both banks also the oxygen sensor readings and everything else...
